Tropical Fruit Platter with Mango Silk Sauce
 
arrange fruit on dark green hibiscus leaves- any non-toxic leaves can be used
 
Mango Silk Sauce:
 
flesh of 1 mango
1/4 cup frozen orange juice concentrate
2 tbsp lime juice

1 pineapple, halved, cored, peeled
and cut crosswise into 1/2 -inch slices
1 papaya, peeled and sliced
1 melon, peeled and sliced
mint or watercress sprigs

Procedure:

1. Puree the mango in a blender
2. Add the orange juice and lime juice, whirl until sauce is smooth
3. Pour sauce into a small bowl, and refrigerate the sauce until you're ready to serve,as long as overnight.
4. Place the pineapple slices in a row down the center of a large platter.
5. Overlapping them,- Arrange the papaya and melon slices on either side
6. Spoon the sauce over the fruit,
7. Garnish with mint or watercress and Serve
.
