Le Cafe Au Lait

Main Course- Happy Halloween

Corny Dogs
 
Vegetable oil
10 frankfurters(hot dogs)
1 cup Corn Bread Mix(Jiffy)
1/3 cup all purpose flour
1/3 - 1/2 cup water
1 egg
1/2 tsp dry mustard
1/4 paprika
 
Heat oil(2-3 inches) to 365 degrees in deep fat fryer or kettle. Wipe hot dogs dry; insert wooden skewer in end of each hot dog. Mix remaining ingredients in shallow bowl. Dip hotdog into batter, allowing excess batter to drip into bowl. Fry in hot oil, turning once, until brown 3-4 minutes; drain on paper towels.
 
Makes 5 servings

Jumbo Burger
 
2 pounds ground beef
3 eggs, slightly beaten
1/2 cup quick-cooking oats
1 package(4 ounces) blue cheese, crumbled
6 green onions, sliced(about 1/3 cup)
1 tsp salt
1/2 tsp pepper
1/4 cup catsup
 
Mix ground beef, eggs, oats,cheese,onions,salt and pepper. shape mixture into 2 patties, about 6 inches indiameter. Cover and refrigerate at least 30 minutes
Grill 4 inches from hot coals 12-15 minutes. turn;grill 10 minutes. Brush burgers with catsup;grill 2 minutes Cut into wedges
