Le Cafe Au Lait

Main Course

GINGER-CURRY CHICKEN

4 pounds broiler-fryer chicken parts
Juice of 1 lemon
2 teaspoon salt
1/4 cup water
1/4 cup raisins
2 teaspoon ground ginger
2 teaspoons curry powder
1 teaspoon sugar
1/2 teaspoon ground nutmeg
2 medium red apples, cored and cut into rings
1 carton (8 ounces) dairy sour cream
6 cups hot cooked rice
Condiments (below) 

Heat oven to 375 degrees. Place chicken in Dutch oven. Sprinkle with lemon juice and salt. Cover and bake 1 hour. Add water, raisin, ginger, curry powder, sugar, nutmeg, and apple rings. Cover and bake 15 minutes. remove chicken and apple rings; keep warm. Stir sour cream into mixture in Dutch oven. Heat 3 -5 minutes(do not boil) Serve chicken with sauce, rice and Condiments.
 
Condiments
 
Choose from the following : chopped green peppers, chopped tomatoes, sliced gherkin pickles, chutney, grated lemon peel, toasted shredded coconuts, chopped peanuts and preserved kumquats.

Zesty Broiled Chicken

Ingredients:

3 tablespoons garlic powder
1 tablespoon dried basil
1 1/2 teaspoons dried oregano
3/4 tsp salt
3/4 tsp black pepper
1 tablespoon lemon juice
1 tablespoon olive oil
1 chicken(about 3 pounds)

Procedure:

1. Preheat broiler. Line broiler pan with foil and lightly coat with nonstick cooking spray

2. For seasoning mix, combine garlic powder, basil,oregano,paprika,salt and black pepper in small jar with lid; cover. Shake well to mix.

3.Mix 1 tablespoon seasoning mix,the lemon juice and olive oil in a small bowl until well blended;set aside.

4.Remove skin from chicken and discard. Cut the chicken into serving pieces

5. Brush the chicken pieces with reserved plive oil mixture; place chicken on prepared broiler pan

6.Broil the chicken,turning twice,until juices run clear when meat is pierced with a knife, about 35 minutes
